Main ingredient
- 3 lb crab meay
Fresh & other
- 6 onions
- 3 scotch bonnets Shopping tip: Very hot. Habanero is the same heat and easier to find.
Sauces & oils
- ¾ cup oil Shopping tip: Vegetable, canola or peanut oil for frying.
Spices & seasonings (2): black pepper, salt
- 1 ½ tsp black pepper
- To taste salt
How to make it
Steps in our own plain words.
-
If using whole crabs, boil them in a large pot of water for 15 minutes, cool, then crack the legs and backs and pick out the meat. Or use 3 lb crab meay (picked meat) as is.
-
Seed and 3 scotch bonnets (wear gloves). Chop 6 onions.
Dice: Dice means cut into small cubes.
What it looks like: Little squares about the size of a pea or a sugar cube, all about the same size.
-
Heat ¾ cup oil in a skillet over medium heat. Cook the onion and pepper for 4 to 5 minutes, until soft. Add the crab meat, 1 ½ tsp black pepper and salt. Cook for 4 to 5 minutes, stirring gently, until hot (165°F) and a little browned. Serve with rice or bread.
On the side: Green salad
A side we added to round out the meal. It is not part of the original recipe.
How to make it (10 min)
- Rinse the salad greens. Slice the cucumber.
- Put it all in a bowl and toss with the dressing just before eating.
