How to make it

Steps in our own plain words.

  1. Peel.

  2. Cut the potatoes in even, medium-sized chunks.

  3. Put in a big pan filled with cold salted water.

  4. Bring to the boil.

  5. Heat for 10-15 mins till a knife can be inserted in the potatoes easily.

  6. While that cooks, melt the butter in a large cook pan over a medium heat.

  7. Add the some seasoning, spring onions, cabbage and garlic.

  8. Stir every so often till your cabbage is wilted but still retains little bite.

  9. Set aside.

  10. Drain the potatoes.

  11. Leave to steam-dry for 2 mins.

  12. Mash with seasoning, mustard and the cream in the same pot.

  13. Stir in the cabbage and ham hock.

  14. Keep warm over a low heat.

  15. Reheat the pan you used to heat the cabbage.

  16. Add a splash of oil, crack in your eggs.

  17. Fry to your liking.
