How to make it

Steps in our own plain words.

  1. Put a deep roasting tin on the bottom shelf of the oven, plus make sure that there’s another shelf above it.

  2. Pull your roasting tin out.

  3. Do it on its shelf, fill two-thirds using boiling water from the kettle.

  4. Slide it back in.

  5. Turn the oven on to 350°F (325°F for a fan oven).

  6. Tear off a big sheet of foil and greaseproof paper (around 30 x 16 inches).

  7. Sit the greaseproof over the top of the foil and butter it.

  8. Tip vanilla seeds, flour and butter into a food processor.

  9. Pulse until the butter has disappeared.

  10. Tip into a mixing bowl.

  11. Stir through the suet.

  12. Pour in your milk plus work together with a cutlery knife till you get a sticky dough.

  13. Need drop more milk, depending on your flour.

  14. Tip the dough out on a floured surface, fast pat together to smooth.

  15. Roll out to square roughly 25 x 10 inches.

  16. Spread your jam all over, leaving gap along one edge.

  17. Roll up from the opposite edge.

  18. Pinch the jam-free edge in your dough where it meets, plus pinch the ends roughly, too.

  19. Lift on the greased paper, join-side down, loosely bring up your paper and foil around it.

  20. Scrunch together along your edges and ends to seal.

  21. Your roly-poly will puff quite bit during cooking so ’t wrap it tightly.

  22. Lift the parcel directly on the rack above the tin.

  23. Cook for 1 hr.

  24. Let your pudding sit for 5 mins before unwrapping.

  25. Open your foil and paper, and thickly slice to dish up.
