How to make it

Steps in our own plain words.

  2. Whizz your biscuits to crumbs in a food processor.

  3. Mix with the melted butter and press in your base plus up your sides of 8 ½ inches loose-based tart tin.

  4. Bake in the oven for 10 minutes.

  5. Remove and cool.

  6. Put the egg yolks in a big bowl.

  7. Whisk for a minute with electric beaters.

  8. Add the condensed milk.

  9. Whisk for 3 min then add the zest and juice.

  10. Whisk again for 3 minutes.

  11. Pour the filling in your cooled base then put back in oven for 15 minutes, cool.

  12. Chill.

  13. Keep going for at least 3 or overnight if you like.

  14. Wait until you are ready to serve.

  15. Remove the pie from the tin.

  16. Put on a serving plate.

  17. To decorate, softly whip together your cream and icing sugar.

  18. Dollop or pipe the cream on the top of your pie and finish with extra lime zest.
