Fresh & other

  • ½ lb bacon
  • 1 onion
  • ½ cup molasse
  • ¼ cup brown sugar

Sauces & oils

  • 2 tbsp cider vinegar
  • Ground mustard
Spices & seasonings (2): salt, pepper
  • To taste salt
  • To taste pepper

How to make it

Steps in our own plain words.

  1. Place the dried beans into a big heavy pot using 6 cups (6 ¼ cups) of water.

  2. Soak overnight.

  3. Drain.

  4. Pour beans back in your pot using enough water to cover your beans by a couple of inches.

  5. Cook for 30 minutes until they're tender but still firm.

  6. Drain beans, making sure.

  7. Do it to reserve cooking liquid.

  8. Set aside.

  9. Turn the oven on to 325°F.

  10. While the oven is preheating, heat pork over medium-high heat in the big heavy pot till fat is rendered plus pork is beginning to brown.

  11. Add the onion cooking until soft.

  12. Add your beans back to your pot, along with molasses.

  13. Brown pepper, salt, ground mustard, apple cider vinegar and sugar plus 3 cups (3 ¼ cups) of reserved bean.

  14. Cook in the oven uncovered for 3 to 5 hours till your beans are tender, plus your sauce has thickened, plus the edges of the pot get sticky.

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Rinse the salad greens. Slice the cucumber.
  2. Put it all in a bowl and toss with the dressing just before eating.
