How to make it

Steps in our own plain words.

  1. Make the curry paste.

  2. Use a pestle plus mortar to pound together the dried and peanuts, nutmeg, cumin, coriander, white pepper, lime zest, lemongrass, galangal, garlic, shrimp paste and fresh chillies, plus 1 tsp salt.

  3. Have a rough paste, alternatively.

  4. Add all your ingredients to a food processor along using 2-3 tbsp of coconut milk plus pulse until you have a paste.

  5. Store in a lidded jar in your fridge.

  6. Will keep for up to two weeks.

  7. Add 2-3 tbsp of your thick part of the coconut milk in a pot over a medium-high heat.

  8. Wait until the coconut milk starts bubbling.

  9. Add 1-2 tbsp of your curry paste.

  10. Stir well for about 1 min, until it smells good.

  11. Stir in the chicken.

  12. Let it cook for around 3-4 mins till beginning to brown all over.

  13. Follow with the French beans.

  14. Stir well.

  15. Season with the fish sauce and sugar.

  16. Add the rest of coconut milk.

  17. Mix well.

  18. Add half the makrut lime leaves.

  19. Simmer for 3-5 mins till the chicken is cooked through, taste.

  20. Add more sugar or sauce if necessary – it be salty plus nutty, and the sweetness should come through.

  21. Add your Thai basil leaves, give it quick mix.

  22. Take off the heat.

  23. Dish up using steamed jasmine rice, garnished using your sliced chilli plus the rest of the makrut lime leaves.

On the side: Naan

A side we added to round out the meal. It is not part of the original recipe.
