How to make it

Steps in our own plain words.

  1. Cut the meat into large pieces.

  2. Put in your largest pot.

  3. Cover with 21 cups water.

  4. Bring to your boil over high heat, skimming away foam that rises to the surface.

  5. Add the bay leaves.

  6. Season.

  7. Turn the heat down to a simmer.

  8. Cook for 1 hr, till the meat is tender and falls off the bone.

  9. Add the beans if using dried.

  10. Turn the heat up.

  11. Bring back to the boil.

  12. Turn the heat down.

  13. Simmer for another 20 mins – your beans should still be slightly raw.

  14. Add the carrots, onions, garlic and pepper.

  15. Stir well.

  16. Add the chillies, if using.

  17. Cook for 15 mins more.

  18. Stir in the beetroot.

  19. Heat for 10 mins before adding the potatoes.

  20. After 15 mins, add your tomato purée as you like and beans, if using canned.

  21. Bring to the boil.

  22. Cook for 5 mins.

  23. Add the cabbage.

  24. Cook for 5 mins more.

  25. Season.

  26. Top with the parsley and dill.

  27. Turn off the heat.

  28. Leave to stand for 5 mins.

  29. Serve with soured cream on the side.

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Rinse the salad greens. Slice the cucumber.
  2. Put it all in a bowl and toss with the dressing just before eating.
