How to make it
Steps in our own plain words.
-
Heat 1 tbsp vegetable oil in a big pan over medium-high heat till shimmering, about 1 minute, 2.
-
Add 2 cloves minced garlic plus 1 finely chopped shallot to the pan, stirring the whole time until it smells good and lightly golden, 2-3 minutes, 3.
-
Tip: Keep heat medium.
-
Do it to prevent burning—garlic turn bitter if overcooked, 4.
-
Add 8 oz ground pork to the pan, breaking it up with a spoon.
-
Heat until no pink remains, 5-7 minutes.
-
Stir in 1 ½ tbsp prahok.
-
Heat for 1 min to blend the flavors, mashing it a bit into the pork, 6.
-
Pour in ½ cup coconut milk.
-
Turn the heat down to medium-low.
-
Simmer for 10 min until the mixture thickens slightly.
-
Stir to mix, 7.
-
Tip: Simmer to avoid curdling your coconut milk—a steady bubble is ideal.

-
Stir until the sugar dissolves, 9.
-
Remove the pan from heat.
-
Stir in 1 tbsp lime juice, mixing well, 10.
-

-
Do it to preserve its fresh, flavor without cooking it out, 11.
-
