  • 3 cloves garlic
  • 2 shallots
  • 2 chiles Shopping tip: Fresno or jalapeño for mild (seeds out); Thai bird's eye or serrano for hot.

  • Garnish cilantro Shopping tip: Fresh cilantro (UK: coriander). Use the leaves and soft stems.

Sauces & oils

  • 1 ½ tbsp vegetable oil
  • 1 ½ tbsp fish sauce

How to make it

Steps in our own plain words.

  1. Heat 1 ½ tbsp vegetable oil in a big pan over medium-high heat till shimmering, about 1 minute, 2.

  2. Add 3 cloves minced garlic plus 2 finely chopped shallots to the pan, stirring the whole time until it smells good and lightly golden, 2-3 minutes, 3.

  3. Tip: Keep heat medium.

  4. Do it to prevent burning—garlic turn bitter if overcooked, 4.

  5. Add 12 oz ground pork to the pan, breaking it up with a spoon.

  6. Heat until no pink remains, 5-7 minutes.

  7. Stir in 2 ½ tbsp prahok.

  8. Heat for 1 min to blend the flavors, mashing it a bit into the pork, 6.

  9. Pour in ¾ cup coconut milk.

  10. Turn the heat down to medium-low.

  11. Simmer for 10 min until the mixture thickens slightly.

  12. Stir to mix, 7.

  13. Tip: Simmer to avoid curdling your coconut milk—a steady bubble is ideal.

  14. Add 2 minced Thai chilies, 2 ¼ tsp palm sugar and 1 ½ tbsp fish sauce, about 2 minutes.

  15. Stir until the sugar dissolves, 9.

  16. Remove the pan from heat.

  17. Stir in 1 ½ tbsp lime juice, mixing well, 10.

  18. Tip: Add lime juice off heat.

  19. Do it to preserve its fresh, flavor without cooking it out, 11.

  20. Move the dip to a serving bowl.

  21. Top with 3 tbsp chopped fresh cilantro, 12.

  22. Let the dip cool for 5 min before serving to let the flavors to meld.
