Main ingredient

  • 13 oz chorizo

Fresh & other

  • 3 lb spaghetti
  • 3 ¼ oz parsley Shopping tip: Fresh flat-leaf (Italian) parsley. Curly works too.
  • 9 red bell pepper Shopping tip: Bell pepper (UK recipes call it pepper).
  • 8 oz parmesan cheese

Sauces & oils

  • ½ cup + 1 tbsp olive oil

How to make it

Steps in our own plain words.

  1. Put pan of water on over high heat to boil.

  2. While that cooks, snip the chorizo into strips with scissors.

  3. Chop the parsley and peppers.

  4. Wait until the water is boiling briskly.

  5. Add your spaghetti with a good measure of salt, mix.

  6. Return to the boil.

  7. Cook for 3 minutes.

  8. Heat the oil in a large frying pan.

  9. Add your chorizo plus peppers and plenty of black pepper.

  10. Cook for a minute or so, until hot all the way through plus your juices are stained red from your paprika in the chorizo.

  11. Scoop half mugful of pasta water from the pan.

  12. Drain the remainder and tip the spaghetti in the frying pan.

  13. Add the parsley and parmesan.

  14. Toss fully plus splash in the pasta water, to moisten.

  15. Hand round extra parmesan at the table.

On the side: Garlic bread

A side we added to round out the meal. It is not part of the original recipe.

How to make it (15 min)
  1. Heat the oven to 400°F. Mash the soft butter with the minced garlic.
  2. Split the bread, spread on the garlic butter and bake 8 to 10 minutes until golden. Slice.
