  • 5 oz peas
  • 2 onions
  • 2 carrots
  • 1 celery
  • 8 oz frozen peas
  • to serve bread
Spices & seasonings (1): bay leaves
  • 2 bay leaves

How to make it

Steps in our own plain words.

  1. Put the gammon in a very big pan with 8 ½ cups water.

  2. Bring to the boil.

  3. Take it off the heat.

  4. Drain off your water – this helps to get rid of the saltiness.

  5. Recover with 8 ½ cups cold water.

  6. Bring to the boil again.

  7. Put everything but the frozen peas in the pan.

  8. Bring to the boil.

  9. Reduce to a simmer.

  10. Heat for 1½-2½ hrs, topping up your water as plus when you need to, to similar level it started at.

  11. As your ham cooks plus softens, you can halve if you want, so it's all submerged under the liquid.

  12. Wait until the ham is tender enough to pull in shreds.

  13. It is ready.

  14. Lift discard the skin, peel off and out the ham.

  15. While it is still hot, shred the meat.

  16. Remove bay from the soup.

  17. Stir in the frozen peas.

  18. Simmer for 1 min.

  19. Blend until smooth.

  20. Add splash of water if too thick.

  21. Return to your pan.

  22. Heat through if it cooled, or if you are making ahead.

  23. Wait until you are ready to serve.

  24. Mix your hot soup with most of the ham – reheat if made ahead.

  25. Dish up in bowls with the rest of the ham scattered over the top, plus eat with crusty bread and butter.

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Rinse the salad greens. Slice the cucumber.
  2. Put it all in a bowl and toss with the dressing just before eating.
