  • 1 ½ tbsp mint Shopping tip: Fresh mint leaves.

How to make it

Steps in our own plain words.

  1. Turn the oven on to 350°F (325°F for a fan oven).

  2. Slice your tops off the tomatoes and reserve.

  3. Scoop out most of your pulp using a teaspoon, being careful not to break your skin.

  4. Finely chop the pulp.

  5. Keep any juices.

  6. Sprinkle your insides of your tomatoes using a little sugar to take away your acidity.

  7. Place them on a baking tray.

  8. Heat 2 ½ tbsp olive oil in a big frying pan.

  9. Add the onion and garlic.

  10. Cook for around 10 mins until soft but not coloured.

  11. Add the lamb, cinnamon and tomato purée.

  12. Turn up the heat.

  13. Fry until the meat is browned.

  14. Add the tomato pulp and the stock, the rice and juice.

  15. Season.

  16. Bring to the boil.

  17. Simmer for 15 mins till your rice is tender plus the liquid has been absorbed.

  18. Set aside to cool a little.

  19. Stir in the herbs.

  20. Stuff the tomatoes up to the brim.

  21. Top tomatoes using their lids, drizzle using 2 ½ tbsp more olive oil.

  22. Sprinkle 3 tbsp water into the tray.

  23. Bake for 35 mins.

  24. Dish up using salad and crusty bread, hot or cold.

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Rinse the salad greens. Slice the cucumber.
  2. Put it all in a bowl and toss with the dressing just before eating.
