  • 1 ½ tbsp thai green curry paste
  • 1 ⅔ cups + 1 tsp coconut milk

Sauces & oils

  • 1 tbsp sunflower oil
  • 2 tsp thai fish sauce

How to make it

Steps in our own plain words.

  1. Put your potatoes in a pan of boiling water.

  2. Cook for 5 minutes.

  3. Throw in the beans.

  4. Heat for a further 3 min, by which time both should be tender but not too soft.

  5. Drain.

  6. Put to one side.

  7. Heat the oil until very hot in a wok or large frying pan.

  8. Drop in the garlic.

  9. Heat until golden, this should take only some seconds.

  10. Don’t let it go dark or it will spoil the taste.

  11. Spoon in the curry paste.

  12. Stir it around for some seconds to begin to heat the spices and release all the flavours.

  13. Next.

  14. Pour in the coconut milk.

  15. Let it come to a bubble.

  16. Stir in the fish sauce and sugar.

  17. The pieces of chicken.

  18. Turn the heat down to a simmer.

  19. Cook, covered, for around 8 minutes until the chicken is cooked.

  20. Tip in the potatoes and beans.

  21. Let them warm through in your hot coconut milk.

  22. Add lovely citrussy flavour by stirring in your shredded lime leaves.

  23. Your basil leaves go.

  24. Do it in next, but only leave them on the heat or they will fast lose their brightness.

  25. Scatter with the lime garnish.

  26. Serve right away with boiled rice.

On the side: Naan

A side we added to round out the meal. It is not part of the original recipe.

How to make it (5 min)
  1. Warm the naan in a hot pan or the oven for 1 to 2 minutes.
