How to make it

Steps in our own plain words.

  1. Finely grate your zest of 1 medium orange (around 2 teaspoons) and 1 medium lemon (around 1 teaspoon) into a medium pot.

  2. Add 1, ⅔ cup granulated sugar and 5 cups whole milk (3-inch) cinnamon stick.

  3. Bring to a boil over medium heat.

  4. Remove the pan from the heat.

  5. Add ½ cup dry sherry.

  6. Let sit until cool enough to handle.

  7. While that cooks, cut 1 (12-ounce) -old baguette crosswise in 1-inch-thick slices (about 16).

  8. Arrange in single layer on a rimmed sheet pan.

  9. Pour the milk mixture over the bread.

  10. Let it soak for 5 minutes.

  11. Flip each slice of bread.

  12. Let the bread sit till it absorbs most of your liquid but isn't falling apart, around 5 minutes more.

  13. Heat 1 ¼ cups olive oil in a big frying pan over medium-high heat till shimmering.

  14. While that cooks, whisk 5 eggs together in medium bowl.

  15. Working with 1 slice each time, dip the bread in the egg mix to coat.

  16. Let the excess drip off.

  17. Add to the pan.

  18. Repeat with as many slices if needed till your pan is filled with a single layer.

  19. Fry till golden-brown on the bottom, around 4 minutes.

  20. Flip the slices.

  21. Fry till the second side till golden-brown, 3 to 4 minutes more.

  22. Move to a paper towel-lined plate or sheet pan.

  23. Repeat dipping and frying the remaining bread.

  24. Drizzle with honey to serve.
