How to make it

Steps in our own plain words.

  1. Heat the vanilla pod, chocolate and cream in a pan till the chocolate has melted.

  2. Take off the heat and let it infuse for 10 mins, scraping your pod seeds into the cream.

  3. If using your vanilla extract, add straight away.

  4. Turn the oven on to 325°F (275°F for a fan oven).

  5. Beat yolks and sugar until pale.

  6. Stir in the chocolate cream.

  7. Strain into a jug.

  8. Pour into ramekins.

  9. Place in a deep roasting tray.

  10. Pour boiling water halfway up the sides.

  11. Bake for 15-20 mins until set with a wobbly centre.

  12. Chill in your fridge for at least 4 hrs.

  13. To serve.

  14. Sprinkle some sugar over the top of your brûlées plus caramelise using blowtorch or briefly under a hot grill.

  15. Leave caramel to harden.

  16. Serve.
