How to make it

Steps in our own plain words.

  1. Turn the oven on to 400°F.

  2. Heat half your oil in a deep frying or cook pan measuring around 12 inches in diameter.

  3. Over a high heat, colour your pork belly slices on every side in several batches.

  4. Move to a bowl.

  5. Add the rest of the oil to your pan and lower the heat to medium.

  6. Add the black pudding and bacon.

  7. Fry all over for several mins.

  8. Remove with a slotted spoon.

  9. Fry your onion and peppers for around 10 mins till soft and pale gold.

  10. Add the tomato.

  11. Cook until soft.

  12. Add the chilli flakes, smoked paprika and garlic.

  13. Cook for another 2 mins.

  14. Put the bacon back, black pudding and pork in the pan.

  15. Add the whichever herb you're using, stock and beans.

  16. Bring everything to the boil.

  17. Sprinkle your rice around your pork belly, pushing it underneath the stock.

  18. Let your stock come to the boil again.

  19. Season well.

  20. Move to the oven.

  21. Cook for 20 mins without stirring.

  22. Check to see how your rice is doing.

  23. Your rice should be tender plus the stock absorbed.

  24. If it’s not, put back in oven for another 5 mins, check again.

  25. Taste for seasoning.

  26. Squeeze lemon juice over the top plus drizzle over some extra virgin olive oil before serving, if you like.

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Rinse the salad greens. Slice the cucumber.
  2. Put it all in a bowl and toss with the dressing just before eating.
