How to make it
Steps in our own plain words.
-
Before you do anything, freeze bacon slices that way you're ready.
-
Do it to prep, it'll so much easier to chop.
-
Wash the potatoes.
-
Cut medium dice into square pieces.
-
To prevent any browning.
-
Place your already cut potatoes in a bowl filled using water.
-
Heat 1-2 tablespoons of oil in large pan over medium-high heat in the meantime.
-
Tilt the pan so the oil spreads.
-
Wait until the oil is hot.
-
Drain the potatoes.
-
Add to the pan.
-
Season with Old Bay as needed, pepper and salt.
-
Cook for 10 minutes, until brown.
-
Stir the potatoes often.
-
If needed, add tablespoon more of oil.
-
Chop up the bacon.
-
Add to the potatoes.
-
Your bacon will start to render plus the fat will begin to further heat the potatoes.
-
Toss it up a bit.
-
The bacon will take 5-6 min to crisp.
-
Wait until the bacon is cooked.
-
Turn the heat down to medium-low.
-
Add the minced garlic and toss.
-
Season when more.
-
Add dried or fresh parsley.
-
Control heat as needed.
-
Let the garlic cook until it smells good, about one minute.
-
Before serving, drizzle over your maple syrup and toss.
-
Let that heat another min, giving the potatoes a caramelized effect.
-
Dish up in a warm bowl using a sunny side up egg.
