  • 7 oz sugar
Spices & seasonings (1): cardamom
  • ½ oz cardamom

How to make it

Steps in our own plain words.

  1. Remove the skin of the pumpkin.

  2. Also remove the inner seeds, 2.

  3. Cut the flesh into ¾ inch cubes, 3.

  4. Take your zest off your oranges, with as little pith as possible.

  5. Cut into matchstick-sized strips, 4.

  6. Extract the juice from the oranges.

  7. Remove your seeds from the cardamom pods and reserve.

  8. Place the whole cardamom pod seeds, sugar, orange strips, orange juice and pumpkin in a large pan.

  9. Mix well.

  10. Leave to marinate for around 10 hours or overnight.

  11. Stir every so often, 6.

  12. Bring the mixture to the boil.

  13. Turn the heat down.

  14. Simmer till the liquid has thickened and become syrupy.

  15. This can take around an hour or a little bit longer.

  16. Leave.

  17. Do it to cool.

  18. Place in clean, dry jars.

On the side: Green salad

A side we added to round out the meal. It is not part of the original recipe.

How to make it (10 min)
  1. Rinse the salad greens. Slice the cucumber.
  2. Put it all in a bowl and toss with the dressing just before eating.
